Manly fish Café


Manly Fish Café is on the corner of Cambridge Parade and the Esplanade at Manly. It also has a takeaway manned by qualified chefs and a fresh seafood market, FC Fresh.


BBQ Seafood Plate for Two

Ingredients:

Spanish Mackerel fillets
Cajun spices
Green Tiger Prawns
Turkish bread
Scallops
Olive oil
Sour cream
Soy
Pickled ginger
Wasabi
Lime
Salt
Pepper

Method:

Roll the Spanish Mackerel in the Cajun spices and cook it on the grill.

Peel and devein the green tiger prawns. Put a little bit of garlic and a little bit of olive oil onto the Turkish bread and tiger prawns and grill.

Put a little virgin olive oil over the half shell scallops then, add a bit of sea salt and a twist of pepper. Cook the scallops for about a minute and a half and they’ll be ready when they’ve just started to sizzle.

Don’t overcook the scallops, so serve them when they are medium.

To finish, put a little bit of sour cream onto the mackerel to help balance the Cajun spices out. Add a little bit of lime to help refresh it.

Mix soy, pickled ginger, wasabi and lime, and pour over the top of the scallops.

Add a little bit more olive oil and a bit more lime to the tiger prawns and serve.
